Panettone Workshop with Wayne Caddy

Panettone Workshop with Wayne Caddy

Sourdough Slingers: Off to the UK!

I wanted to share some exciting news with you all. I will be heading to the UK from September 20th to September 30th. Right after the Farmers Market ends on the 20th, I’ll be heading straight to the airport (and sleeping on the plane, hopefully).

This trip is all about growing in my craft and deepening what I know about holiday breads, especially Panettone, which I introduced to our holiday menu last year and you all loved.

Why I’m Going

I’m thrilled to be attending a Sourdough Slingers workshop just outside of London focused entirely on sourdough Panettone. Sourdough Slingers is run by Wayne Caddy, a baker with nearly four decades of experience who has represented the UK in global competitions and earned international honors. This is a small, hands-on four-day workshop, and I cannot wait to learn from Wayne about Pasta Madre, mixing, fermentation, shaping, and that elusive Panettone rise.

This trip is a reminder that a baker never stops learning. I have bookcase full of baking books and I am always reading, testing, tasting, and asking questions. And yes, I already have my eye on a major workshop in France in the near future.

About Panettone

Panettone is often called the “Mount Everest of baking” for good reason. It is a holiday bread celebrated for its rich texture, sweet crumb, and sky-high domed shape. It demands patience, technique, and care to get right, and that is exactly why I want to dive deeper into it.

Why It Matters to Me

My passion for European-inspired sourdoughs is at the heart of everything I bake each week at the Farmers Market. It is also a journey of always learning and always sharing with you, whether that is a new loaf, a technique, or a story.

I feel so grateful to this community for supporting that journey. You encourage me to keep exploring and baking with curiosity. It means so much that the breads I work on, test, and love become part of your tables as well.

A Bit of Wanderlust (and Plans)

If you would like to follow along while I’m away, check out our Instagram and Facebook where I’ll be sharing some snapshots and stories of my UK adventures!

I cannot wait to bring back new insights, techniques, and inspiration to share with all of you, including hopefully a new and improved sourdough Panettone for the holidays.

With gratitude,
Marcella
